Clean tastes and old myths

Ilmatar is the main restaurant of the new Design & lifestyle –hotel Klaus K. Its splendidly decorated dining room is both mythical like a dream and almost sci-fi modern. The interior of the restaurant and indeed the entire hotel was designed by Stylt Trampoli of Sweden’s Kajsa Krause, who lives in Gothenburg and New York.

The starting point for the design has been the North of the Myths and Kalevala, Finland’s national saga.

In Ilmatar, Chef Markus Maulavirta has been given free hands to put into practice his visions and know-how. Maulavirta’s world of tastes is built of game, fresh water fish, berries and other, preferably organic, products of the clean Finnish nature.

The menu includes many delicacies which are prepared with love from products supplied by the regional small producers the maestro (holds in great respect) respects. Many of those raw ingredients have become brands in their own right.

Maulavirta also cooperated with star chef Marcus Samuelsson of Restaurant Aquavit (New York). Their co-operation has brought on a whiff of international flavour to the menus and made sure they’re tempting for everyone. The success of the collaboration was proved by the New York Times, which gave Ilmatar four out of five stars.

In Finland we call it muikku (vendace).
