Restaurant where borshch is not a principal dish, but a symbol.
Ironical symbol, as it does not state Russian national ideas, does not curry favour with Europe, but pays a tribute to the traditions and stays the same in the run of time.
“Light Russian cuisine” - is a contrived concept, but it is adding an intrigue to the experiment.

Restaurateur Valery Shafirov and Chef Alexei Viharev decided to swipe “lightness” from various cuisines: starting with French up to Japanese. Guests are offered traditional dishes with well-known names but in the new original interpretation. Dishes do with fancy exotic products like: asparagus, Rocket salad, mussels, goat cheese and various salads mix.
Minimum fried food and fat, maximum vitamins preserved.
Continuing restaurant’s concept, interior also contributes lightness to the perception of the cuisine.
Lightsome and a bit ironical mix of loft, antique, high-tech and modern luxury was created and putted into life by a talented designer Maxim Languev.
Le Borshch - is a new outlook on the modern Russian life.
