International liquor brands are the same everywhere in the world. The real question is how local environment can be brought into cocktails in an interesting and joyful way. Eat&Joy signature drinks and cocktails are based on Finnish wild berries or vegetables. Preferably made from fresh, but in winter time deep frozen berries.
The Eat&Joy signature cocktails for the first round are the creation of two innovative bartenders, Timo Siitonen and Niko Autti. They have a strong work experience of many years from e.g. London’s top bars.
In Helsinki they have educated and renewed the cocktail landscape with their unprejudiced but refined mixes. Now Timo and Niko are interested in molecular mixology, so berries are probably moving to a new phase.

Rhuba Martini

4cl Koskenkorva
6cm Fresh Rhubarb
6 Basil leaves
15ml Rhubarb juice
10ml Runny Honey
Method: muddle ingredients, add koskenkorva and Shake
Glass: Martini
Garnish: Basil leaf
Notes
Shake vigorously to get the flavour out. Double strain into a chilled Martini glass.
Eat & Joy Helsinki Punch

4cl Koskenkorva
8-10 Fresh Blueberries
6 Fresh Raspberries
6 Fresh Cloudberries
15ml Sugar gomme
top Sparkling wine
(dash Helmi Arrakki Punssi)
Method: muddle ingredients, add Koskenkorva and Shake. Top up.
Glass: High ball
Garnish: Summer berries
Notes
Shake vigorously to break the berries and strain over ice in glass. Top up with sparkling wine.
